Description
The Catena family begins its second century as a wine producer in Mendoza, Argentina. The Adrianna vineyard, located at an altitude of almost 1,500 meters above sea level, is named after Nicolás Catena Zapata's youngest daughter. The soils of this plot are composed of calcium carbonate and marine fossils that covered the region millions of years ago. The limestone layers provide good drainage and are rich in rhizobacteria, the microorganisms that help the vine's roots withstand stress and absorb nutrients. Hence the term "mundus bacillus terrae" or "elegant microbes of the earth."

- Fermentation: 75% in cement eggs (50% whole clusters) and 25% in oak foudres.
- Max. Fermentation Temperature: 25/30ºC. 8-13 days of maceration.
- Aging: 18 months in barrels, oak treatment is decided based on the harvest's characteristics. French Oak.
