DESCRIPTION
Bonarda was the variety adopted by Italian immigrants in the late 19th century, becoming the most cultivated red grape in Argentina by the 1990s. It is a variety that adapts well to light soils and requires an extensive vegetative cycle. It is in the southeast of Mendoza where the average temperatures allow it to reach its optimal level of ripeness.
TASTING NOTES
This wine comes from a small parcel in a vineyard over 80 years old, with extremely low grape yields per plant, resulting in exceptional concentration and complexity. Intense aromas of licorice, green spices like oregano and thyme, and a palate with great volume and persistence.

- Fermentation: Native yeasts. Cold maceration in barrels for 4 days, below 10°C. Fermentation temperature between 25°C and 30°C for 15 days.
- Aging:18 months in French oak barrels.
